Capurso is the other Puglia: A village that surprises you every day. With over 200 annual events and a prime location, it's the ideal starting point for exploring the region and soaking up the Apulian spirit.
Oil production is one of the great traditions of the Capurso area. The oil produced in Capurso It comes from native olive groves whose soil is plowed and reclaimed annually, and whose olive trees are pruned annually. The oil is processed in six phases:
Preparation : the olives are cleaned of all impurities and leaves
Milling : The olives are ground in a stone mill. Pressed and crushed, the olives yield an "oil paste," a semi-fluid composed of a solid component (skins) and a liquid component (water and oil).
Kneading : the oil paste is placed in stainless steel tanks and mixed by helical blades to break the water-oil emulsion present in the oil paste.
Extraction : the oil paste is placed in a horizontal rotating drum called a “decanter” which centrifuges it, separating the oil must from the pomace and the vegetation water.
Separation : the oil must is placed in the separator, a vertical centrifugation machine that definitively separates the extra virgin olive oil from the residual water.
Packaging : the oil is packaged in tin containers or glass bottles to ensure its preservation.
The Perilli Oil Mill and the Cooperative Oil Mill of Capurso They are among the most important extra virgin olive oil producers in Italy thanks to the craftsmanship, professionalism, and tools used to produce this true Apulian gold.
