Senecchiudde

These are gnocchi (cavatelli) hollowed out on a cheese grater. The dough is made of flour, oil, wine, salt, and pepper. In ancient times, they were made at home and baked in the oven. The dough was then fried. Today, they are found both fried and baked, but they are always savory; not to be confused with the sweet ones from Taranto. The term "cavatelli"Senecchiudde” probably comes from “s'hanne achiùte” meaning “they must be closed”.
